Avocado Lime Pound Cake

Ingredients
- 2 cups flour
- 1/2 tsp. baking soda
- 1 avocado
- 1/2 tbsp. lime juice
- 3/4 cups sugar
- 1 ½ eggs
- 1/8 cup sugar
- 1/2 tbsp. baking powder
- 1/2 tsp. salt
- 1/2 tbsp. lemon juice
- 2/3 cup 2% milk
- 1 tbsp. vanilla extract
- 1/2 quart strawberries, sliced
- 1/2 cup whipped cream
Lime Glaze Ingredients
- 1 cup powdered sugar
- 1/4 tsp. vanilla extract
- 2 tbsp. lime juice
- 1/2 tsp. lime powder
Directions
- Preheat oven to 325˚F.
- Purée avocado in a food processor with lemon juice.
- Grease and flour muffin tins or silicone muffin molds.
- Whisk together eggs, sugar, milk, vanilla, and avocado mash.
- Add dry ingredients and stir until incorporated. Bake for 15-20 minutes. Cool.
- Mix strawberries and the second amount of sugar and let sit for 30-45 minutes to macerate.
- Take one muffin, slice it in half, and top the bottom half with macerated strawberries and whipped cream.
Lime Glaze Directions
- Sift powdered sugar and blend with the rest of the ingredients. If too thick, add more lime juice.
